Dhokla is a spongy (bread like structure) which is so juicy and flavory. It tastes so good even it do not contains spices any more. It is made of gram flour which have it's own taste. So let's begin the making of Gujarati Khaman dhokla recipe in english.

Dhokla is a spongy (bread like structure) which is so juicy and flavory. It tastes so good even it do not contains spices any more. It is made of gram flour which have it's own taste. So let's begin the making of Gujarati Khaman dhokla recipe in english.

To make khaman dhokla, first of all strain the gram flour into a big bowl with a strainer so that the thick granules will get left behind and you'll get a smooth and fluffy batter.
Now add salt, citric acid (lemon juice), finely chopped ginger and finely chopped green chillies. - 2
Then add powdered sugar and 2 pinch asafoetida into the bowl.
Mix all this ingredients properly and then add little water step by step and make a thick batter with it. Don't add the water directly otherwise it will create lumps in your batter. Add it little step by step and mix it with a spoon. - 3
Whisk it in one direction with your hand for atleast 10 to 15 minutes.
Add 2 tsp oil and mix well.
This work of whisking is the only hard work you have to do for making the dhokla.
After whisking it continuously for 10 minutes, keep it for rest for at least 25 to 30 minutes. - 4
After 30 minutes of complete rest add 2 tsp baking soda into it and whisk it again thoroughly only for seconds.
Now without wasting any time add this batter into a container in which you want to make your dhokla. - 5
Take a big bowl and boil some water in it.
Make sure that it can sustain your container.
Put a stand into the bowl.
Now put this container over the stand.
Put the gas on medium flame and cover the lid gently. - 6
Cook it for at least 20 to 25 minutes at medium flame.
After getting 25 minutes put off the gas flame and let it rest for 5 minutes.
Don't open the lid for five minutes and it will give you more better result. - 7
Now your dhokla is ready but it is incomplete without a tempering (tadka) over it.
So for making a tempering heat 1 tbsp of oil in a pan.
Add mustard seeds and let it crackle.
Add some slit green chillies, curry leaves
Add 1 cup of water into it. It will produce some sizzling sound. - 8
Now after adding water add some sugar and 2 tsp of lemon juice.
Put off the gas flame and let it get lukewarm.
Add this lukewarm tempering over your dhokla and enjoy your day.
Your dhokla is ready. garnish it with some finely chopped fresh leaves and some type of dips and chutneys.
