Steps
- 1
Carefully wash your matumbo as you know they can be messy 😊.Once that is done I like boiling my matumbo for 2-3hrs. This is to ensure they are fully softened for cooking.
- 2
In the meantime I make sure my other ingredients are well washed, prepared and ready for cooking.
- 3
Once you feel your matumbo is well cooked and tender to your satisfaction, set them aside for the next step.
- 4
In a sufuria add the onions, garlic, dhania stems, rosemary and some oil and let 'em cook for 5mins or so.....
- 5
Add tomatoes and hoho and stir them together
- 6
Once they've softened put your matumbo into the sufuria and stir them then add a little water for some soup. Add your royco
- 7
Once they have simmered for around 10mins add your plain yoghurt. The plain yoghurt makes the stew thick. Let them cook for another 10-15mins and lower the heat.
- 8
Add the dania leaves at the end for garnishing.
- 9
And we're done guys. Serve with ugali pleeease....
