Ingredients

4 servings
  • For the yamarita:
  • 1/4medium size yam tuber
  • 2 table spoonsalt
  • 4 table spoonsugar
  • 5eggs
  • Water just enough to cover it in a pan
  • 4 cupsveg.oil
  • f
  • For the sauce:
  • 4red tomatoes
  • 2onions
  • Pinchgarlic
  • 1 teaspooncurry powder
  • 3seasoning cubes
  • Pinchsalt
  • f
  • For the tea
  • Clean water
  • 1 tablespooncloves (ground)
  • 1/2 tablespoonginger (ground)
  • Handfull mintleaves
  • Handfull lemon grass

Steps

  1. 1

    For the yamarita: peel cut and boil yam with sugar and salt untill soft. Slice and coat with whisked eggs (don't whisk too much) and fry in hot oil.

  2. 2

    For the sauce:slice onions and tomatoes.stir fry with little oil,garlic,curry seasoning cubes and pinch salt untill translucent.

  3. 3

    For the tea:boil everything together for 30 mins. Serve with sugar or honey.
