Steps

Preheat oven at 170 degrees c. and prepare a 8" pan by lining it with parchment at the bottom.

Coarsely grate carrots.

Sift flour baking powder and baking soda together.

In a big bowl beat egg sugar salt orange juice and zest until pale.

Add oil slowly and beat.
- 6
Gently fold in flour add mix carrot.
- 7
Fold in the raisins coated with flour so that they dont sink at the bottom of the pan when baking.

Pour the batter in the prepared pan and bake for 90mins or less. Check if done 10mins to time.

When its done and cool, frost with frosting of your choice, though it blends well with cheese cream frosting.
