Place the flour in a large bowl. Make a well in the center and add the salt.

Gradually add the water, stirring vigorously with a wooden spoon.

Add the egg and mix well. To cook the crêpes, melt a little butter in your skillet and cook each crêpe for 1 to 2 minutes on each side.

Add your fillings while the second side is cooking. In the photo: pieces of goat cheese, honey, and chopped walnuts.

You can also add other fillings, such as sautéed mushrooms with cream, onions, and parsley.

Try with pre-cooked potatoes and cancoillotte cheese.

Or use blue cheese with a few walnuts. Let the cheese melt.
