Ingredients

Serves 4 servings
  1. 8corn tortillas, sliced into strips and fried in oil
  2. 1/2onion
  3. 2 clovesgarlic
  4. 8 cupschicken broth (about 2 liters) or 2 chicken bouillon cubes
  5. 1panela cheese
  6. 1avocado
  7. 8 sprigsepazote
  8. 4Roma tomatoes
  9. 2pasilla chiles
  10. sour cream
  11. salt

  1. 1

    In a pot, heat 2 tablespoons of oil and fry the pasilla chiles cut into thin strips. Set aside.

  2. 2

    Blend the tomatoes, onion, garlic, 8 fried tortilla strips, chicken broth, and 4 cups water (about 1 liter) until smooth.

  3. 3

    Pour the blended mixture into the pot with the hot oil and cook to fry the sauce.

  4. 4

    Add the epazote leaves and check if you need to add more water or broth.

  5. 5

    Let it boil for 15 minutes.

  6. 6

    To serve, place a portion of fried tortilla strips in a bowl, pour the soup over them, and garnish with sour cream, avocado, panela cheese, and some of the fried pasilla chiles.
