Ingredients

  • 1/2 lbshredded kataifi dough (knafeh)
  • 7 tablespoons (100 grams)unsalted butter, melted
  • 1/4 cupvegetable oil
  • For the cream (Kashtaliya):
  • 4 cupsmilk (about 950 ml)
  • 1 cupmilk, extra (about 240 ml)
  • 1 cupfresh heavy cream (about 240 ml)
  • 6 tablespoonscornstarch
  • 5 tablespoonssugar
  • 1 tablespoonorange blossom water
  • 1 tablespoonrose water
  • 5mastic pieces, ground with a pinch of sugar
  • For garnish:
  • Pistachios
  • Strawberries
  • Banana

Steps

  1. 1

    In a baking pan, combine the shredded kataifi dough with the melted butter and vegetable oil. Rub the dough well to coat evenly.

  2. 2

    Bake in a preheated oven at medium heat for about 15 minutes. Stir every 5 minutes so it browns evenly on all sides.

  3. 3

    In a saucepan, combine 4 cups milk, the heavy cream, and sugar. Stir well.

  4. 4

    In a separate bowl over heat, mix the extra 1 cup milk with the cornstarch. Whisk until the cornstarch is fully dissolved.

  5. 5

    When the milk mixture is hot, add the milk and cornstarch mixture. Stir constantly until the mixture thickens into a creamy consistency. Add the ground mastic, orange blossom water, and rose water, then remove from heat.

    Pour the cream mixture into glass cups. Set aside to cool.

  7. 7

    Serve chilled.

    Layer the cooled cream in cups with the baked knafeh dough. You can add slices of strawberries or banana between the layers. Sprinkle ground pistachios on top.
