Ingredients

  • 600 gramsmutton
  • 500 gramsextra long grain basmati rice (i used indiagate super)
  • 1 tbspginger garlic
  • 2green chillies finely chopped
  • handfulcoriander mint leaves
  • 3medium onions fried
  • 1tomato chopped
  • 100 gramsyoghurt
  • 1 tbspred chilli powder
  • 1 tspcumin powder
  • 1 tspgaram masala powder
  • 1 tspturmeric powder
  • to tastesalt
  • For whole haram: 4 cardomons 4 small sticks cinnamon 6 peppercorns 4 cloves
  • 2star anise
  • 2medium potatoes cut into 1 and half inch cubes and deep fried
  • handfulfried onions chopped coriander and mint leaves
  • As required Desi ghee
  • 1/2 cupMilk
  • 2 pinchfood colour
  • 2 dropskewra essence

Steps

  1. 1

    Marinate mutton with ginger garlic paste chopped tomato fried onions yoghurt red chilli powder cumin powder turmeric salt chopped green chillies chopped coriander mint leaves 2 cloves 2 cardamons 4 peppercorns 2 sticks cinnamon 1 star anise

    Mix well and set aside for 1 hour

    For rice boil sufficient water in a vessel add cloves cardamons cinnamons Peppercorns star anise, oil and salt

    Once water starts boiling add one hour washed and soaked basmati rice cook till 90 percent done then strain the rice

    After 1 hour of marination is complete transfer mutton pressure cooker add 1/4 cup oil and 1/2 cup water pressure cook till mutton is tender

    Once mutton is tender add fried potatoes to it garnish with fried onions chopped coriander mint leaves

  7. 7

    Then add boiled rice on top again garnish with fried onions coriander mint leaves pinch of food colour a tbsp desi ghee spread all over rice and the milk add a drop if kewra essence

  8. 8

    Cover and cook on medium flame for 5 to 7 minutes then lower the heat and simmer 5 to 7 minutes once fumes starts coming out biryani is ready

  9. 9

    Serve with raita chutney kachumber salads.
