Jhatpat Mutton Biryani Recipe

Marinate mutton with ginger garlic paste chopped tomato fried onions yoghurt red chilli powder cumin powder turmeric salt chopped green chillies chopped coriander mint leaves 2 cloves 2 cardamons 4 peppercorns 2 sticks cinnamon 1 star anise

Mix well and set aside for 1 hour

For rice boil sufficient water in a vessel add cloves cardamons cinnamons Peppercorns star anise, oil and salt

Once water starts boiling add one hour washed and soaked basmati rice cook till 90 percent done then strain the rice

After 1 hour of marination is complete transfer mutton pressure cooker add 1/4 cup oil and 1/2 cup water pressure cook till mutton is tender

Once mutton is tender add fried potatoes to it garnish with fried onions chopped coriander mint leaves

Then add boiled rice on top again garnish with fried onions coriander mint leaves pinch of food colour a tbsp desi ghee spread all over rice and the milk add a drop if kewra essence

Cover and cook on medium flame for 5 to 7 minutes then lower the heat and simmer 5 to 7 minutes once fumes starts coming out biryani is ready

Serve with raita chutney kachumber salads.
