Ingredients

Serves 2 servings
  1. 2.2 lbssmoked jack mackerel (about 1 kg)
  2. 2/3 cupgreen olives (about 3.5 oz or 100 grams)
  3. 1small onion, finely chopped
  4. 1tomato, finely chopped
  5. 1 tablespoonchopped garlic
  6. 1 tablespoonsalt
  7. 1 tablespoonblack pepper
  8. 3bay leaves
  9. olive oil
  10. 10.5 ozshrimp (about 300 grams)

  1. 1

    Shred the smoked jack mackerel into small pieces, similar to machaca.

  2. 2

    Heat a skillet and add olive oil. Add the chopped garlic, onion, and tomato, and sauté for 3 minutes.

  3. 3

    Add the smoked jack mackerel and shrimp. Season with salt, pepper to taste, and bay leaves. Cook for 15 minutes.

  4. 4

    Make quesadillas using corn or flour tortillas, filling them with the jack mackerel and shrimp mixture. This helps the flavors blend with the cheese.

  5. 5

    To serve, simply make delicious tacos and top with your favorite homemade salsa.
