Crunchy Peanut Butter Flapjacks

These were made to encourage my daughter to keep revising in exam season (good slow-release brain food), and also to address today's craving (mine) for peanut butter (see Peanut Butter Granola recipe).
Crunchy Peanut Butter Flapjacks
These were made to encourage my daughter to keep revising in exam season (good slow-release brain food), and also to address today's craving (mine) for peanut butter (see Peanut Butter Granola recipe).

Pre-heat oven to 180°C/Gas 4. Grease and line a 30 x 20cm rectangular cake tin with baking parchment.

Melt the the butter in a large pan then add the sugar, syrup and peanut butter and stir over a low heat until smooth. Stir in the vanilla extract.

Remove the pan from the heat and stir in the oats and raisins until really well mixed.

Transfer the mixture to the prepared tin and push down evenly. I used a potato masher. Bake in the oven for 20 mins until lightly golden.

Give the dog the empty peanut butter jar, if there is one.

Cool for 10 mins before marking into bars using a sharp knife. Leave to cool completely before removing from the tin.

When cool, dust flapjacks with love and encouragement and rush to work station.
