Ingredients

  1. 4eggs
  2. 1 cupsugar
  3. 1 tspvanillia
  4. 1/2 tspsalt
  5. 4 cupsmilk
  6. 4 cupscooked minute rice (2 cups dry)
  7. 2 cupswater (for rice)
  8. 1 cupraisins

Steps

  1. 1

    Heat oven to 350 degrees. Place a 9x13 pan that is half full of water under the rack you will cook the rice. Let the pan heat with the oven.

  2. 2

    Follow the minute rice directions and prepare rice in the microwave.

  3. 3

    In a dish, add eggs, sugar and salt. Beat slightly to mix.

  4. 4

    Stir in milk, and add vanillia.

  5. 5

    Pour the mixture into a 3 qt baking dish, and add the cooked rice and 1 cup of raisins and stir gently.

  6. 6

    Gently sprinkle nutmeg on top to taste.

    Place in the oven over the pan of water. Cook at 350 degrees for 50-60 minutes. When finished it should look gelatinous.
