Ingredients

Pre-30,cook-30minutes
8 serves
  1. 1 cupwhole Wheat Flour, extra for dusting
  2. 2 tbspChick Pea Flour
  3. 3/4 cupcheese
  4. 1 tspChilli flakes
  5. 1/2 tspdried oregano
  6. 1/2 tspmixed herb
  7. 1/2 tspblack Pepper
  8. 2 tbspOlive oil
  9. 1and 1/2 tbsp Butter
  10. 1/2 tspdried basil
  11. 8-10fresh basil leaves
  12. 3/4 tspSalt or according to taste

Steps

Pre-30,cook-30minutes
  1. 1

    Take 3/4 cup cheese in a mixer jar, add 1 tsp red chilli flakes,
    add 1/2 tsp each of dried oregano, basil & pepper powder,add 1/2 tsp dried mixed herbs, blend

  2. 2

    Grind till smooth, set aside

  3. 3

    Take 1 cup whole-wheat flour, add 2 tbsp gram flour,add the blended herbed cheese mix, 2 tbsp olive oil,add some water, mix well

  4. 4

    Add salt to taste, knead into a dough adding water as required

  5. 5

    Cover with cloth, rest the dough for 15-20 mins

  6. 6

    Now knead the dough again for 2 mins

  7. 7

    Shape it into small balls

  8. 8

    Dust with dry flour, roll the balls into thin chappati

  9. 9

    Trim the extra edges to make neat rounds of the same size

  10. 10

    Place on a tava, flip & grill on low-medium heat on both sides

  11. 11

    When both sides are half done, press & cook until crisp from both sides

  12. 12

    Do same with all balls (cook, grill and crisp)

  13. 13

    Get all the khakhras ready, allow them to cool

  14. 14

    Melt 1.5 tbsp butter, add a handful of fresh basil leaves, fry until crisp

  15. 15

    Allow them to cool, add some salt, crush lightly & mix

  16. 16

    Transfer this basil-butter & the crisp khakhras in a plastic bag, shake it to coat evenly

  17. 17

    Now Cheesy Herbed Khakhra is ready to serve
