Steps

Take 3/4 cup cheese in a mixer jar, add 1 tsp red chilli flakes,
add 1/2 tsp each of dried oregano, basil & pepper powder,add 1/2 tsp dried mixed herbs, blend - 2
Grind till smooth, set aside

Take 1 cup whole-wheat flour, add 2 tbsp gram flour,add the blended herbed cheese mix, 2 tbsp olive oil,add some water, mix well

Add salt to taste, knead into a dough adding water as required

Cover with cloth, rest the dough for 15-20 mins

Now knead the dough again for 2 mins

Shape it into small balls
- 8
Dust with dry flour, roll the balls into thin chappati

Trim the extra edges to make neat rounds of the same size

Place on a tava, flip & grill on low-medium heat on both sides

When both sides are half done, press & cook until crisp from both sides

Do same with all balls (cook, grill and crisp)

Get all the khakhras ready, allow them to cool

Melt 1.5 tbsp butter, add a handful of fresh basil leaves, fry until crisp

Allow them to cool, add some salt, crush lightly & mix

Transfer this basil-butter & the crisp khakhras in a plastic bag, shake it to coat evenly

Now Cheesy Herbed Khakhra is ready to serve
