Low Carb. San Marzano tomatoes taste so very delicious for canned tomatoes. I use them on special occasions. I use the Cento brand they are real from Italy. They are certified. They grow the tomatoes in the volcanic soil from that region.

Ingredients

  1. 1-1/2 poundchicken breast boneless and skinless partially froze
  2. 1leek
  3. 1 cupolives stuffed with pimiento pepper
  4. 1/2 cupshredded Parmesan cheese
  5. 29 ouncesSan Marzano tomatoes certified
  6. 1/2 teaspoongranulated garlic powder
  7. 2/3 teaspoonkosher salt
  8. To tasteground black pepper
  9. 2 tablespoonspeanut oil

Cooking Instructions

  1. 1

    Slice the cup of olives. Slice the leek in half. Wash the leeks especially inbetween the layers. And slice thinly. Slice the partially frozen chicken very thinly.

    Heat the oil anx add the sliced chicken. Add the olives and leeks and simmer 15 minutes. Then add the tomatoes including all the juices.

    Simmer covered for 40 minutes and allow the juices to reduce. Add Parmesan cheese and cover. Let rest 12 minutes. Serve I hope you enjoy!!!
