Ingredients

  1. 🏵️ Leftover carnitas
  2. 🏵️ 3 or 4 large tomatoes
  3. 🏵️ 2 to 3 serrano peppers
  4. 🏵️ 1/4 onion
  5. 🏵️ 3 medium potatoes
  6. 🏵️ A pinch of cumin (what you can grab with your fingers)
  7. 🏵️ Salt

Cooking Instructions

    I didn't peel the potatoes, but that's up to you. Cut them into medium cubes and cook them with a little salt (Remove them from the water when they are almost done, still a LITTLE HARD)

    Blend the tomatoes, peppers, onion, and cumin with a little water

    Heat the carnitas in a pot, and once they are hot, add the blended sauce. Let it simmer over medium heat until it changes color

    Once it changes color, add the drained potatoes and let them cook until fully done. Check the salt; in my case, it didn't need more because the carnitas were already salty, and with the sauce, they turned out great ♥️✨
