We went to a party and were given some carnitas, and since Jorge doesn't like to eat the same thing two days in a row, I got creative and used the same carnitas to make a different version, and he loved it 😊👍✨♥️ (You can also make this with cooked, fried, and shredded pork) 👍🏵️

Cooking Instructions

I didn't peel the potatoes, but that's up to you. Cut them into medium cubes and cook them with a little salt (Remove them from the water when they are almost done, still a LITTLE HARD)

Blend the tomatoes, peppers, onion, and cumin with a little water

Heat the carnitas in a pot, and once they are hot, add the blended sauce. Let it simmer over medium heat until it changes color

Once it changes color, add the drained potatoes and let them cook until fully done. Check the salt; in my case, it didn't need more because the carnitas were already salty, and with the sauce, they turned out great ♥️✨

You can leave it on the heat longer until the excess water evaporates or to your liking 👍✨ and that's it, we're done 🎉🎉👏♥️🏵️

This is basically Mexican cornbread using carnitas meat instead of hamburger. Making the carnitas is the only somewhat time-consuming step, which I usually do the day before because I'm old and get tired quicker. But it's really worth the effort and time because this cooking method imparts incredible flavor and tenderness to the pork. If you're questioning the use of lard, or wanting to substitute a different fat (like shortening), do a quick internet search and you'll learn that lard is a lot healthier than previously thought.
