Prepare the meat filling by sautéing the ground beef with oil, onion, spices, and salt until fully cooked. Let it cool, then place it in a strainer to drain any excess liquid. Mix in the fried pine nuts and set aside.

Soak the fine bulgur wheat in water, adding the water gradually and stirring occasionally until the bulgur softens and expands. Use just enough water for the bulgur to absorb; do not add too much.

Using a food processor, grind the bulgur twice with the fine blade. On the third round, process the bulgur together with the finely ground beef and onion until you get a smooth dough. Add the spices and salt and mix well.

Start shaping the kibbeh by filling the dough with the meat mixture. Wet your hands with a little water to help shape the kibbeh.

You can freeze the kibbeh for later use.

Fry the kibbeh in plenty of hot oil until golden brown.
