Ingredients

  1. 1.1 lbsground beef for kofta, prepared by your butcher (500 grams)
  2. or:
  3. 1.1 lbsfinely ground beef (500 grams)
  4. 1 piecebeef or lamb fat, finely chopped
  5. 1small onion
  6. 1 cupchopped parsley (about 30 grams)
  7. Salt, to taste
  8. 1 pinchcinnamon
  9. 1 pinchallspice

Steps

  1. 1

    Grind the beef and fat together with the onion, salt, cinnamon, allspice, and parsley.

  2. 2

    Chill the kofta mixture in the refrigerator for 10 minutes.

  3. 3

    Wet your hands with water. If using wooden skewers, soak them in cold water for 1 hour before grilling to prevent burning. You can also use stainless steel skewers if available.

  4. 4

    Take a portion of the kofta mixture and shape it around the skewer into a long, oval shape. Grill the skewers over charcoal. Enjoy!
