Grind the beef and fat together with the onion, salt, cinnamon, allspice, and parsley.

Chill the kofta mixture in the refrigerator for 10 minutes.

Wet your hands with water. If using wooden skewers, soak them in cold water for 1 hour before grilling to prevent burning. You can also use stainless steel skewers if available.

Take a portion of the kofta mixture and shape it around the skewer into a long, oval shape. Grill the skewers over charcoal. Enjoy!
