Juicy Kidney sauce

I had some cow kidney and kept wanting to make some sauce out of it, some ideas came to my head from the ingredients I had and I just cooked... The result was mind blowing and delicious!

I had some cow kidney and kept wanting to make some sauce out of it, some ideas came to my head from the ingredients I had and I just cooked... The result was mind blowing and delicious!
Steps

Wash and cut the Kidney into sizeable chunks then set aside.

Wash and chop up the peppers, tomato, green beans and carrots into sizeable chunks then set aside too

Chop onions into small chunks and set aside

Heat up your saucepan over medium heat, add in the olive oil and allow heat up
- 5
Sauté the red onion and half of the white onion for a minute, then add in the tomato. Stir fry for another 30seconds then add in the soy sauce.

Allow simmer for 30seconds, and add in 3 cups (750ml) of water. Bring to boil, then add in the chopped kidney, a pinch of dried thyme, the bay leaves, 1 stock cube, half teaspoon salt and allow boil for 7 minutes

Mix the corn starch in a cup of warm water till smooth then add into the boiling stock to thicken a bit, let boil for 2 minutes

Now add in the chopped peppers, carrots, green beans and the remaining onion and mix thoroughly. Allow to start boiling.

Once it starts boiling again, add the remaining stock cube, taste for salt and adjust if need be, then put off the cooking heat so you don't overcook the veggies

Serve with either pasta, rice, Yam or as you desire
