Heat the pan add ghee and grated carrots saute 2 minutes add 1/2 cup milk cook for 5 minutes. Allow to cool. Grind smooth paste in a mixie jar and transfer to pan add powdered sugar mix well cook for about 3 minutes add cardamom powder. Allow to cool.

In a mixing bowl sieve all purpose flour, baking soda, baking powder, butter, buttermilk,1/2 cup sugar powder mix well and add carrot paste, Raisins mix well if required add milk and make thick flowing consistency.

Grease the Cake tin with butter and dust flour and pour the batter gently tap to spread evenly.

Preheat the oven up to 5 minutes then keep inside the oven and bake for about 15 minutes@ 180°.

Check by using toothpick whether cooked or not. Allow to cool for 1 hour. Sponge fluffy carrot cake is ready. Cut the cake and enjoy with tea.
