Ingredients

3 servings
  1. 7 ouncesfresh mushrooms
  2. 1/2large green bell pepper
  3. 1/2red bell pepper
  4. 1/2onion
  5. 9 ouncesshredded cheese or your preferred type
  6. 1 cupblended and cooked beans
  7. 10whole wheat flour tortillas
  8. 6 leavesromaine lettuce or escarole

Steps

  1. 1

    Wash and disinfect all the vegetables. Set aside.

  2. 2

    Shred the cheese and set aside.

    Remove the seeds from the peppers and cut them into strips, and slice the onion into thin julienne strips.

    Slice the mushrooms thickly.

    In a little oil, sauté the onion, peppers, and mushrooms. Watch the cooking point.

    Spread a tortilla with a little beans, add some of the sautéed mixture, and sprinkle with shredded cheese.

    Roll it up into a thick taco shape and place it on a griddle, turning occasionally to avoid burning.

    Place on lettuce and enjoy!
