Ingredients

  1. Couscous
  2. Carrots (diced)
  3. Green beans (chopped)
  4. Green peas
  5. Red and green bell peppers (chopped)
  6. Onions (diced)
  7. Peppers (copped)
  8. Seasonings
  9. Spices of choice
  10. Vegetable oil

Steps

  1. 1

    Put water on fire in a pot and bring to a boil

  2. 2

    Add a little salt and little vegetable oil to the boiling water then add in the couscous

  3. 3

    Put the pot down from the stove/gas cooker and allow the couscous to cook

  4. 4

    Put a frying pan on the cooker and add in vegetable oil to the pan

  5. 5

    Allow the vegetable oil to heaten up for a few mins then add in the chopped and diced vegetables, onions and peppers and stir fry

  6. 6

    After a few mins, add in the seasonings and spices of choice, mix, then cover and allow to simmer for a few mins

  7. 7

    Add in the couscous to the stir fried vegetables in the frying pan and mix properly together

  8. 8

    Cover for a few minutes and allow to cook

  9. 9

    Serve and enjoy

  10. 10

    NB* You can garnish with finely chopped cucumbers, gives it a lovely taste
