Steps

Wash your gizzard well

Boil and season your gizzard to your taste till tender.

Cut your gizzard into smaller bits and fry then set aside

Cut you plantain into cube shape and fry then set aside.

Wash your vegetables and cut
- 6
Stir fry your vegetables, pepper and tomatoes. In case you don't have fresh tomatoes use your grinded tomatoes. Continue frying for some minutes, add fried gizzard and plantain.

Add salt and seasoning to your taste. You can add curry, thyme etc if desire

Leave for few more minute and your stew is ready

Boil your rice and serve with your stew
