A coworker gave me this recipe several years ago, and I've kept it ever since because it's foolproof and the result is wonderful. They are super easy and quick to prepare. Ingredients

4 servings
  1. 8.8 ozdesalted and flaked cod
  2. 2eggs
  3. 2heaping tablespoons all-purpose flour
  4. 1/2 packetbaking powder
  5. 1-2 clovesgarlic, minced
  6. 1 tablespoonfresh parsley, chopped
  7. Olive oil

Steps

    Chop the cod flakes with a knife or food processor and place in a bowl.

    Add the eggs and mix well.

    Incorporate the flour and baking powder and stir until everything is combined.

    Add a level tablespoon of oil, and the minced garlic and parsley to taste. Mix very well and let rest for 10-15 minutes.

    Meanwhile, heat plenty of oil in a pan. Once hot, use a spoon coated with oil to scoop portions of the batter and drop them into the pan. They will puff up and float immediately.

    As soon as they are golden brown, transfer them to a plate or dish lined with paper towels to remove excess oil. And they're ready! Enjoy!
