1 tbspbutter
1onion
2large potatoes
2large carrots
1parsnip
1.5 litresvegetable stock (2 stock cubes)
4 stalkscelery

Peel and roughly chop all vegetables

Fry onion and potato in the butter in a large pot for 2 minutes

Cover and sweat for 8 minutes

Add stock and the rest of the vegetables, and simmer for 29 minutes
