Greek Village Salad Super with Marinated Feta

Wash all the vegetables.

Prepare the marinade for the feta the night before:

In a jar, combine the olive oil, thyme and oregano sprigs, black pepper, and a few parsley leaves.

Cut the feta into strips and place them in the jar with the marinade.

Let it sit overnight at room temperature (do not refrigerate).

In a large salad bowl, cut the tomatoes, cucumber, bell pepper, onion, and green onions.

Add the capers, olives, and finely chopped parsley on top.

Lightly moisten the barley rusks and cut them in half. Place them in a bowl, drizzle with a little olive oil and a few drops of vinegar, and toss gently to lightly marinate. Make sure they stay crunchy inside.

Add the rusks to the salad.

Remove the feta from the marinade and arrange it on top of the salad.

Sprinkle with thyme, oregano, and salt, then toss well.
