  1. 2 cupssugar
  2. 3/4 cupcocoa powder
  3. 2 cupsall purpose flour
  4. 1 tsp.baking powder
  5. 2 tsp.baking soda
  6. 1 tsp.salt
  7. 2eggs
  8. 3/4 cupvegetable oil
  9. 2 tspvanilla extract
  10. 1 cupbuttermilk
  11. 1 cupboiling water

    Preheat oven to 350°F

  2. 2

    In a large bowl, sift all dry ingredients together; add eggs, vegetable oil, vanilla and buttermilk.

  3. 3

    Beat with a mixer (or by hand) for a couple of minutes until smooth and silky.

  4. 4

    Stir in boiling water until blended.

  5. 5

    Fill 18-20 (I actually got 27 cupcakes) cupcake liners with batter and bake for 22-25 minutes.
