Clean all the stuff out of the chicken (giblets and whatnot). Then rinse outside and inside with water, dry with paper towels.

Put hella butter under the skin, and over the skin too. Put some herbs in the cavity, some herbs under skin, some herbs over the skin too. Season generously with S&P inside and out. Make it rain with that salt!

Put that bird under arrest. I tell him "put your hands behind your back!" Put the wings behind as if he's relaxing on the beach.

Cook at 450°F for an hour. Skin will be crispy and salty and delicious.
