Ingredients

  1. 1 lbgreen beans
  2. 2chicken breasts
  3. 1large carrot
  4. 2medium potatoes
  5. 1tomato
  6. 1 tablespoonstomato paste
  7. 2 clovesChopped garlic
  8. If you wish chicken broth or water
  9. to tasteSalt pepper
  10. 3-4 spoonsvegetable oil

  1. 1

    Prepare veggies; wash and trim end of the beans, brush, and cut carrots and potatoes. Cut onions. Purée one tomato with garlic and 1 tbs of tomato paste. Now, heat 2-3 tbs of oil, add 1 onion and sauté until they are soft.

    Add chicken to the onions

    Sauté for a while until chicken is half way cooked, then add puréed tomatoes. Add some water in to your blender pour into the pan.

    I added some left over chicken broth, too.

    Now time to cook veggies with chicken.

    As you see my pot needs more water, maybe little less then half way of the veggies, so I added it. Don't forget to add salt and pepper.

    Cook until water gets down to 1/4 of the pot or chicken is cooked.

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
