Ingredients

  1. For the salad-
  2. 1beetroot, boiled and chopped
  3. 1 cupquinoa
  4. 1cucumber, chopped
  5. 1onion, sliced
  6. 1/4 cupfresh cilantro, chopped
  7. For the dressing-
  8. 1 tbspextra virgin olive oil
  9. 1garlic clove, minced
  10. 2 tbspfreshly squeezed lemon juice
  11. to tasteSalt and pepper

Cooking Instructions

    Whisk all the dressing ingredients in a small bowl and keep aside.

    Wash the beetroot and cut the ends of the beet and place in a pan of boiling water and boil for 5-7 minutes and set aside.

    Bring quinoa and 2 cups water in a sauce pan over high heat.

  4. 4

    Reduce the heat to medium low, cover and simmer until quinoa is tender and liquid has been absorbed, about 15 minutes.

    Fluff the quinoa with the help of fork.

  6. 6

    In a salad bowl, add quinoa, beetroot, cucumber, onion and cilantro and mix well.

  7. 7

    Pour the dressing over the tossed salad and serve chilled!!.
