Ingredients

  • 5 oz.Lettuce (or whatever greens you have on hand)
  • 1thinly sliced cucumber
  • 1/2thinly sliced medium red onion
  • 1/2 cuppumpkin seeds (or whatever nuts you have on hand)
  • Salad dressing
  • 3 tbspolive oil
  • 1 tbspfreshly squeezed lemon juice
  • 1 tspdijon mustard
  • 1chopped garlic clove
  • 1/2 tspsalt
  • 1/4 tspfreshly ground black pepper

    For salad dressing, whisk all the ingredients together in a small bowl.
