Ingredients

1 cupboiled and cubed sweet potatoes
2eggs
1onion, finely chopped
1 clovegarlic, minced
Oil for frying

Steps

1

Fry the onion, add garlic, add the potato cubes and brown a little. Beat the eggs and pour over the potatoes. Fry and turn to fry the other side. Serve hot with some salad.
