Add in little oil in a frying pam, followed by onions, garlic, ginger, cumin, ground oregano and sweat for about a minute

Add in peppers, green bell pepper, carrots and cook for about 5-7mins while stirring frequently to avoid burning

Season, and cook for 2mins. Remove and set aside

Using a sharp knife, peel the plantains and slice horizontally into 4-5 pieces depending on the size of the plantain.

Heat up oil in a frying pan but do not allow the oil to smoke. Fry the plantains until lightly brown
Transfer into a sieve or paper towel to drain oil - 6
Form plantain into a pinwheel. Secure with a tooth pick, then cover the bottom with 2-3 tooth picks in order to prevent the fillings from falling off

Fill each pinwheel with the fillings. Repeat for all the pinwheels

Spoon beaten eggs over each pinwheel to keep it together

Heat up oil in a frying pan, fry the plantain pinwheels for about 2-3mins in batches to avoid over crowding the pan. Transfer into a plate or paper towel.

Serve warm and enjoy
