Ingredients

  • 2aubergines, cut in 1 cm chunks
  • 2medium red onions, cut in chunks
  • Chicken for 4 people
  • 2 clovesgarlic or 1 tbspn garlic paste
  • 1 Tbsp +/-lemongrass paste and ginger
  • 2courgettes, cut in 1cm semi-circles
  • 1 tbspnbrown or white sugar
  • 1 tbspnfish sauce
  • 1-2green peppers in chunks
  • 1 tbspnwhite wine vinegar
  • 2 tbspnThai green curry paste
  • 1 tincoconut milk

Steps

  1. 1

    Roast the aubergines with a bit of oil, garlic, s&p in oven at 180 deg until turning brown.

  2. 2

    In a large saucepan fry for 10 mins the onion, chicken, garlic, +/- ginger and lemongrass.

  3. 3

    Add the courgette, fish sauce, white wine vinegar and sugar. Fry for 5 mins.

  4. 4

    Add the aubergine, green peppers and Thai paste. Heat for approx 5 mins and then add coconut milk. Simmer for a few minutes.
