Ingredients

8 servings
  • 2 litresfull cream milk
  • 3 tspcardamom powder
  • 1 tspsaffron strands
  • 1 1/2 cupsugar or as per taste
  • 1/2 cupalmonds and pistachios

Steps

  1. 1

    Firstly,Boil the milk and keep on stirring on low flame, so that it doesn't get burnt.

  2. 2

    Then add saffron strands and cardamom powder and stir until milk reduces and thickens.

  3. 3

    Reduce it to half,for creamier texture we reduce the milk.

  4. 4

    Then once reduced,add sugar and stir let it boil,as sugar leaves out water.

  5. 5

    After we see the milk has become thick...Then switch off the flame.

  6. 6

    Mix the chopped almonds and pistachios.

  7. 7

    Then we can transfer the thick reduced kulfi milk into moulds.We can use the clay moulds, as well as any glass,steel or plastic moulds.But,see that the top of kulfi should be covered with a alluminium foil or cover,so that it can quickly freeze and get ready to eat.

    Freeze in your freezer for about 8-10 hours for better results

    Take cool kulfi,out of freezer and relish in this hot summer.
