Nha Trang Fish Cake Noodle Soup (Bún Chả Cá Nha Trang)

It's been almost 10 years since I last made this dish. My younger brother brought back some fish cakes from his trip to Nha Trang, so I made Fish Cake Noodle Soup for the whole family to enjoy.
P.S.: This soup is usually simmered with pork ribs, but since we wanted a lighter flavor, I used chicken bones instead (the broth is still very flavorful).

Ingredients

Serves 4 servings
  1. 1.1 lbsNha Trang fish cakes (about 500 grams)
  2. 2.2 lbschicken bones (about 1 kilogram)
  3. 1/2pineapple
  4. 2tomatoes
  5. 1little of each: green cabbage, lettuce, bean sprouts, fresh herbs (such as cilantro and mint)
  6. Green onions, cilantro, ginger
  7. Seasoning powder, fish sauce, sugar, black pepper, chili peppers
  8. Fermented shrimp paste, chili satay, lime (optional)

Steps

    Wash and prep all vegetables, then drain well.

    Rinse chicken bones with salt, add a few slices of ginger, and simmer to make broth. When the chicken is tender, add pineapple and cook for about 10 minutes, then add tomatoes and cook for another 3 minutes. Season to taste (keep it slightly mild, as you'll add shrimp paste later if desired).

    Boil water to blanch the rice noodles. Slice the fish cakes into bite-sized pieces, then add them to the hot broth to warm through. To serve, place noodles and fish cakes in a bowl, ladle hot broth over, and top with chopped green onions, cilantro, black pepper, and shrimp paste with chili (if desired). Enjoy!
