I often peel potatoes, prick with fork and deep fry them. Today I pricked them, brushed ghee and baked in a preheated oven at 180 degrees for 8-9 minutes. They taste equally good like fried.

Heat remaining ghee in a pan. Crackle jeera, mustard and hing.
Add onion tomato paste.Cook until all it's water evaporates and it starts leaving ghee - 3
Add turmeric powder, salt and garam masala into it (making a paste)
Give a good mix, now add cream and let it cook for a minute until masala leaves ghee. - 4
Add potatoes, water to maintain desired consistency.Sprinkle chopped coriander and kasuri methi..
Serve hot with paratha.
