Ingredients

45 mins
  1. 3/4 cuppine nuts toasted
  2. 2 sliceswholemeal bread
  3. 1 clovegarlic
  4. 1 tablespoonlemon juice
  5. 1 cupfish or chicken stock
  6. 1 tablespoonchopped parsley
  7. 1 tablespoonbutter
  8. Grind of one lemon cut into thin strips
  9. 4whitefish fillets

  1. 1

    Pine nut sauce: Place pine nuts, bread, garlic, lemon juice and stock into a food processor.

  2. 2

    Using the pulse action process to 30 seconds or until smooth.

  3. 3

    Transfer to small pan, stir in parsley and warm through.

  4. 4

    Thin the sauce with extra stock if necessary

  5. 5

    Heat butter and lemon strips in a medium pan, add the fish and cook on a medium heat 2 minutes on each side

  6. 6

    Serve the fish with a pine nut sauce and a green salad
