Tacos Rojos (Potosino Tacos or Camila Tacos)

Remove the veins and seeds from the chiles, then soak them until they are soft.

Once the chiles are soft, blend them with the garlic, onion, and cup of water. Add salt to taste. Blend and set aside.

Separately, boil the potatoes and carrots. Once cooked, dice them into small cubes.

Grate some of the cheese and mix it with finely chopped onion. This will be used for the filling.

Heat oil in a pan or wide container. (It's important to have all the ingredients ready.) Take the tortillas one by one, fully immerse them in the chile mixture, and place them in the pan with oil for just a few seconds. Drain slightly, remove, and place on a plate. Fill with the cheese and onion mixture and roll into taquitos.

Once you have some taquitos ready, use the same oil to fry the vegetables; potatoes and carrots.

Next, place a bed of lettuce on the tacos, add one or two tablespoons of potatoes and carrots, grated cheese, and sour cream. You can also add hot sauce to taste. And it's ready!
