Ingredients

  1. 1/2 cuprice
  2. 1-1 1/2 cupcurd (adjust as needed)
  3. as neededsalt
  4. Ingredients for tempering curd rice
  5. 1 sprigcurry leaves
  6. pinchhing or asafoetida
  7. 1/4 cupPomegrante seeds
  8. 1/2 tspginger minced or crushed
  9. 1green or red chilli, slit
  10. 1/2 tspcumin or jeera
  11. 1/2 tspmustard

Steps

  1. 1

    Wash and soak rice for 20 to 30 minutes.
    Add 1 & ½ cups water,salt to the pan, soft cook the rice.Fluff up the rice or mash lightly to suit your liking. Cool it completely.

    Heat oil in a pan.
    Add cumin and mustard.

    When they begin to splutter, add split green chillies,ginger,dals and fry until golden.Add ginger, chilli and curry leaves.
    When the curry leaves turn crisp, add hing.

    Add grated coconut,roast for few seconds.Switch off the flame.

    Add yogurt to the rice. Mix pomegrante seeds,coriander leaves.
    Pour the seasoning and mix. South indian style curd rice is ready.

    Put the prepared rice in a square container and keep in refrigerator to get chilled.Transfer into a plate.Serve after garnishing with pomegrante seeds.
