Dissolve the yeast in the water.

In a stand mixer bowl, add the flour, salt, and yeast, making sure the salt and yeast don't touch. Mix with the dough hook. Once a rough dough forms, add the softened butter. Mix until the butter is fully incorporated and the dough is smooth and forms a ball.

Cover with a kitchen towel and let rest for 1 hour.

Meanwhile, thinly slice the onions. In a skillet with a little oil or butter, cook the onions over very low heat, stirring often, until they turn translucent. Set aside.

Cut the bacon slices into lardons and set aside.

After 1 hour, roll out the dough thinly and place it in a tart pan.

For the topping: In a mixing bowl, combine the quark or Greek yogurt, sour cream, black pepper, and nutmeg.

Spread this mixture over the dough, then top with the bacon and onions as desired.

Bake for 8–9 minutes in an oven preheated to 480°F (250°C).
