Ingredients

Serves 4 servings
  1. For the dough:
  2. 4 cupsall-purpose flour (about 500 grams)
  3. 1 1/2 teaspoonsactive dry yeast (about 5 grams)
  4. 1 cupwater (about 250 ml)
  5. 2 tablespoonsbutter, softened (about 25 grams)
  6. 1/2 teaspoonsalt (about 2.5 grams)
  7. For the topping:
  8. 2 cupswhole milk quark or Greek yogurt (about 500 grams)
  9. 1/2 cupthick sour cream (about 125 grams)
  10. 2 cupssliced onions (about 250 grams)
  11. 9 ouncessmoked bacon, sliced or cut into lardons (about 250 grams; I got mine from my butcher—just as affordable as store brands and much better quality)
  12. Black pepper and nutmeg
  13. I don't add salt, since the bacon is already salty

Steps

    Dissolve the yeast in the water.

  2. 2

    In a stand mixer bowl, add the flour, salt, and yeast, making sure the salt and yeast don't touch. Mix with the dough hook. Once a rough dough forms, add the softened butter. Mix until the butter is fully incorporated and the dough is smooth and forms a ball.

    Cover with a kitchen towel and let rest for 1 hour.

    Meanwhile, thinly slice the onions. In a skillet with a little oil or butter, cook the onions over very low heat, stirring often, until they turn translucent. Set aside.

    Cut the bacon slices into lardons and set aside.

    After 1 hour, roll out the dough thinly and place it in a tart pan.

  7. 7

    For the topping: In a mixing bowl, combine the quark or Greek yogurt, sour cream, black pepper, and nutmeg.

    Spread this mixture over the dough, then top with the bacon and onions as desired.

    Bake for 8–9 minutes in an oven preheated to 480°F (250°C).
