Beef and Carrots

Beef and carrots is the ultimate family dish. This meal simmers for hours, making the meat incredibly tender—you can cut it with a fork. The beef soaks up the flavors of the herbs and bay leaves in the dish.
I add lots of carrots because we love them; they turn out perfectly soft and flavorful.

Cut the beef into cubes. Peel, wash, and slice the carrots into rounds. Peel, wash, and slice the onion. In a drizzle of olive oil, brown the beef for 5 minutes.

Add the carrots and onion and cook for another 5 minutes. Add the water, tomato sauce, bay leaves, and bouquet garni. Cover and simmer on low heat for 2 hours and 30 minutes. Near the end of cooking, dissolve the cornstarch in a little cold water and pour it into the pot. Let the sauce thicken for a few minutes.
