One of the things that I seriously missed when cutting out dairy was my chowders, especially Seafood chowder. It was always hard to find a half and half dairy free product. Found one and works like a charm! Enjoy!

One of the things that I seriously missed when cutting out dairy was my chowders, especially Seafood chowder. It was always hard to find a half and half dairy free product. Found one and works like a charm! Enjoy!

Ingredients

  1. 1sweet onion
  2. 2celery stalks
  3. 2medium red potatoes
  4. 1 cupfrozen calamari rings
  5. 1 cupfrozen small scallops
  6. I cup frozen clams
  7. 1 tspsalt
  8. 1 tsppepper
  9. 1bay leaf
  10. 1large tbsp (scoop) dairy free butter
  11. 1 jarclam juice
  12. 1 cupdairy free milk
  13. 16 ozdairy free half and half
  14. to tasteSalt and pepper

Cooking Instructions

    Chop up the onions and celery: set aside.

  2. 2

    Heat a tablespoon of olive oil in pan, while oil is heating up chop the potatoes and set aside.

    Once the oil is heated add the onions, celery, salt and pepper. Saute until onions are translucent or for about 7 minutes. Lower to medium high heat.

    Add the potatoes, clams, scallops and calamari rings. Stir together on a low saute for about 5 minutes.

    Add clam juice, dairy-free half and half, dairy-free milk, dairy-free butter and bay leaf. Bring to quick boil. Once boiling reduce heat to medium and let cook/simmer until potatoes are soft. Add salt and pepper as needed.
