If you grind your own deer you know how hard it is to make juicy burgers out of such a lean animal. Well I have done it after much trial and error. I used a ceramic coated cast iron skillet that had grates in it like a grill.

Ingredients

6 servings
  1. 2 poundsground venison
  2. 3egg yolks
  3. 3 tablespoonleft over bacon grease (i said they are juicy not healthy)
  4. splashsoy sauce
  5. seasoning salt
  6. pepper
  7. garlic

Cooking Instructions

    Mix bacon grease and rest of spices and egg yolks in the meat and make into patties about 1/2 inch thick

    Fry in skillet the one I used is pictured. 6 minutes on each side. If using the same pan I do add some oil in it to fry with because of how lean the meat is. A regular cast iron skillet you wouldn't need the extra oil probably. I DO NOT recommend using a non stick pan for this as they will not brown the meat and will dry them out faster

Just a dad that loves cooking. Been cooking since I could reach the stove. Love coming up with stuff and am a big fan of cooking from scratch. Don't really have a style I generally cook in almost any genre of food.

I have been making this recipe for years. I can't access the recipe anymore unless it's through the app which sucks because there isn't a print capability. I was going to print it for a friend. These burgers are always a huge hit. I use the same recipe with beef burgers. The bacon grease makes a huge difference with deer meat as well.
