Spinach is a staple in my kitchen all year round. It's low in calories and packed with vitamins, especially iron, making it great for people with anemia.

Spinach is a staple in my kitchen all year round. It's low in calories and packed with vitamins, especially iron, making it great for people with anemia.

Remove the stems from the spinach and wash the leaves thoroughly to get rid of any dirt.

Add the water to a pot and bring to a boil. Add the spinach and cook.

In a skillet, fry the garlic cloves.

Set the garlic aside. In the same oil, fry the bread slices. (These can be gluten-free and dairy-free if needed.)

Remove the bread and set aside. Add the paprika to the skillet, stir, then add some of the spinach cooking liquid. Mix well and pour this over the spinach.

Blend the fried garlic with the bread, vinegar, cumin, and salt. Add this mixture to the spinach.

Add the chickpeas and cook until the sauce thickens.

Optional: Serve with croutons or fried bread. Enjoy!
