Ingredients

  1. 5beer brats; cut into 6ths
  2. 1 Clong grain rice
  3. 16 ozPabst Blue Ribbon beer
  4. 2 stalkscelery; small dice
  5. 1yellow onion; small dice
  6. 1red bell pepper; small dice
  7. 2green tomatoes; small dice
  8. 3 clovesgarlic; slivered
  9. 1 tfresh thyme; minced
  10. 1 tdried oregano
  11. 2 Tbutter
  12. as neededolive oil
  13. as neededparmigiano reggiano

    In a seperate saucepot, bring beer to a boil. Immediately kill heat and stir to subside foam. Turn heat to low to keep at a simmer.

    Heat enough oil to cover the bottom of a large, tall saute pan.

  3. 3

    Add sausage. Sear well on one side over medium-high heat.

  4. 4

    Add onions, peppers, and celery. Stir.

  5. 5

    Season with dried oregano, thyme, salt, and pepper. Saute 2 minutes.

  6. 6

    Add green tomatoes. Stir. Cook 2 minutes.

  7. 7

    Add butter and garlic. Cook 1 minute.

  8. 8

    Add rice. Stir well. Cook 1 minute.

  9. 9

    Add beer. Stir. Bring to a simmer. Cover. Cook approximately 15-18 minutes or until liquid is no longer running. (Easiest with a clear lid.)

    Garnish with parmigiano reggiano
