Here's a perfect seasonal dish that we love at home. It's definitely not light, but what a treat!

Peel the potatoes and cut them into thick slices (about 1/8 inch or 2–3 mm). Rinse and dry them with a kitchen towel.

Heat 2 tablespoons of olive oil in a large skillet over high heat. When the oil is hot, add the potatoes.

Lower the heat slightly and cook for 20 to 25 minutes, stirring frequently.

Meanwhile, cut the tomme cheese into 1/2-inch (1 cm) cubes. Set aside.

Peel the garlic cloves and remove the sprouts. Set aside.

When the potatoes are cooked, add the bacon. Cook for 5 minutes.

Add the crushed garlic (using a garlic press), then the cheese cubes, pepper, and chopped flat-leaf parsley.

The cheese will start to melt—gently mix everything together.

If you like the cheese to get a little crispy, cook for a few more minutes over slightly higher heat. I love it this way!
