It's Holi the Indian Festival of colours. I have made malpua with bananas, nuts and fennel, a traditional Indian dessert made during holi.

In a mixing bowl add 1/2 cup sugar and 1 cup warm milk. Let the sugar dissolve completely. Leave it for 10 minutes. Then add maida, dry fruits, rava and fennel seeds. Mix it well. Cover it and leave it for 30 minutes. Meanwhile, peel and mash the bananas.

After 30 minutes stir the batter once and add mashed bananas. Mix it well. Malpua batter is ready.

Turn on the flame and heat oil in a pan. Now put one small ladle of batter, cook it for low flame. Flip it carefully. Fry it till it turns light golden from both the sides.

Take it out and keep it aside. Repeat the process to fry remaining malpuas. Now our malpuas are ready

Now again heat a pan. Add 1 cup of sugar and 1 cup of water. Let the sugar dissolve on medium flame. Add crushed cardamom, add 1/2 tspn lemon juice. Boil it for 3-4 minutes on low flame. Add two pinch of saffrons. Turn off the flame, let it cool down a bit. Put the malpuas in sugar syrup for 2-3 minutes. Take it out in a serving plate. Garnish it with homemade rabri and serve.
