Ingredients

  1. 1 1/2 lbschicken leg quarters (about 680 grams)
  2. 1/2 lbpotatoes, diced (about 225 grams)
  3. 3large zucchini, diced
  4. 4large carrots, diced
  5. 2chayotes, diced
  6. 1/4 lbgreen beans, cut into 4 pieces each (about 115 grams)
  7. piecesCabbage
  8. 3 earscorn, each cut into 3 pieces
  9. Herbs of your choice (such as bay leaf, thyme, marjoram)
  10. Onion, garlic
  11. Black pepper to taste
  12. Salt to taste
  13. Sprigsepazote
  14. Guajillo and pasilla chiles to taste, stemmed, seeded, toasted, and soaked
  15. 1chicken bouillon cube

Steps

  1. 1

    Cook the chicken with the herbs, black pepper, a piece of onion, garlic, salt, and the chicken bouillon cube in a large pot with water.

  2. 2

    Meanwhile, blend the chiles with a piece of onion and garlic until smooth. Strain and set aside.

  3. 3

    Once the chicken is cooked, add the vegetables and let them cook until tender.

  4. 4

    Finally, add the chile sauce and epazote. Taste for salt and let the stew simmer until all the ingredients are fully cooked.
