Ingredients

  1. 6 tablespoonsOlive Oil
  2. 3 cupsdiced sourdough bread
  3. 3 poundsRoma tomatoes cut in 1/2 inch slices
  4. 5 clovesgarlic
  5. 2 teaspoonssugar
  6. 2 teaspoonskosher salt
  7. 1 teaspoonblack pepper
  8. 1/2 cupchopped fresh basil leaves
  9. 1 1/2 cupsfresh grated parmesan cheese (not the stuff in the green can)

Steps

  1. 1

    Pre-heat oven to 350 degrees

  2. 2

    Using 4 tablespoons olive oil, sauté bread over medium heat about 5 minutes, stirring frequently - until browned

  3. 3

    Combine tomatoes, garlic, sugar, pepper, and salt in a large bowl

  4. 4

    Add tomato mixture to the bread, continue cooking 5 minutes

  5. 5

    Turn off the heat and add the basil

  6. 6

    Pour into a shallow baking dish

  7. 7

    Sprinkle with parmesan cheese and remaining olive oil

  8. 8

    Bake 30-40 minutes, or until tomatoes are bubbly
